Gluten Free Lemon Cookies



So simple and easy.

Ingredients:
1 Cup Butter softened
1 Cup Sugar
2 eggs
1 1/2 tsp lemon extract or lemon juice
1/8 tsp salt
2 1/4 Cup All Purpose Gluten Free Flour

Directions: Beat butter and sugar until creamy, remember to scrap down the sides. Then add eggs one at a time, mix. Add lemon extract and salt, mix. Gradually add flour, mix until well combined. Refrigerate to firm up the dough (about 1 hour). You can roll these out like I did (use some starch to roll them out, I like tapioca starch because it is sweet) or just scoop and flatten on the lined cookie sheet. Bake at 350 degrees for about 12 minutes.

Frosting - I used Lemon flavored butter cream and yellow sprinkles.
Also easy to make.
1 stick softened butter
1/2 cup shortening
2 cups powder sugar
1 tsp lemon extract
food color of your choice. 

Beat on high till frosting consistency.  Remember after frosting your cookies to add sprinkles and let air dry till the frosting is set.

  1. I love lemon anything!! I like to roll out lemon cookies in 1 cup of flour with a 1/4 cup of powder sugar. It's a little sweet too!
