Chocolate Raspberry Marshmallows
Grab you copy of Bittersweet Walnut Grove - Winter Thyme, you are going to need the Bittersweet Marshmallow recipe. I'll wait; go get your book! .... If you need a copy grab it from Amazon.

These are amazing! Our nanny said they were better than store bought candy! Huge compliment and you will hear the same from all your friends and family. When making the marshmallows use raspberry extract instead of vanilla and add pink food coloring during the last 2 minutes. Once the marshmallows have dried the 4 hours. Cut them apart and prepare your chocolate.
Chocolate:
1 cup milk chocolate chips
2 tbs shortening
Place in a glass bowl. Microwave for a total of 2 minutes, stopping every 30 seconds to stir. Lay out a sheet of wax paper. Using a fork dip each marshmallow individually, tap off excess chocolate, place on wax paper to dry. You will need to dip the marshmallow fast, as the hot chocolate will begin to melt the marshmallow if let in the bowl.
Package these up for Valentine's treats! Your mailman will love them! Don't forget the teachers!
