Dinner Rolls for Thanksgiving

My favorite gluten free roll recipe.  I only take the time to make these for Holiday meals like Thanksgiving and no one even can tell they are gluten free.  They have always turned out, just put in a little effort.

Ingredients:
2 1/2 teaspoons active dry yeast
1 cup water, heated to about 110 degrees
3/4 cup almond flour
1/2 cup millet flour
1/3 cup potato starch
1/2 cup tapioca flour
1/3 cup sweet rice flour
1/3 cup cornstarch
1 1/4 teaspoons salt
3 tablespoons sugar
3 teaspoons xanthan gum
1/4 cup nonfat dry milk powder (makes the recipe not dairy free)
1/2 cup potato flakes
8 tablespoons unsalted butter, softened
1 large egg

Directions:
In a small bowl combine the yeast and a pinch of sugar. Pour the cup of warm water into the bowl with the yeast and sugar and stir gently. Set aside for about 15 minutes to allow the yeast to bubble.

In a large bowl, pour the almond flour, millet flour, potato starch, tapioca flour, sweet rice flour, and cornstarch. Mix to combine. Add salt, sugar, xanthan gum, dry milk powder, and potato flakes. Mix everything together until well combined. Add butter, egg, and yeast mixture. Mix until everything is combined about 3 minutes on medium.

The dough will be soft, do not add extra flour. Place the dough in the microwave with a warm moist towel to rise for 1 hour. Dough should double in size.

Grease a large cake pan or baking dish. Form rolls, allow to rise again till double in size. Preheat oven to 350 degrees. Bake till tops are brown.
