Sugar Cookies

1 cup butter or earth balance
1 cup sugar
2 eggs
1 1/2 tsp vanilla extract
1/8 tsp salt
2 1/4 cups gluten free all purpose flour

Preheat oven to 350 degrees.

Mix all dry ingredients in a medium bowl and set aside.  In a large bowl cream butter and sugar together with electric mixer or stand mixer on medium speed. Add one egg at a time, mix well after each addition. Add vanilla extract. Add dry ingredients mixing on low till combined. Refrigerate dough for 1 hour. Roll out using flour and cut with cookie cutters. Bake for 12 minutes.

Frost or top with sugar sprinkles

Notes from Mom: switch up the extract to almond for a more sophisticated cookie.
