Gluten Free Mini Pumpkin Pie Bites (Dairy Free)


Ingredients
1 3/4 cups pumpkin
2 extra large eggs
1 cup coconut milk
1/2 cup dark brown sugar
1 tsp cinnamon
1 tsp ginger
1/4 tsp nutmeg
1/8 tsp black pepper, fresh cracked

Directions
In a mixing bowl, combine pumpkin puree, eggs, coconut milk and whisk to mix well.  Add brown sugar and spices. Whisk together.

Pour in unbaked pie shell. (grab the gluten free pie crust recipe from Gluten Free Mom Certified Cookbook)

Back at 325 until top cracks or tooth pick comes out clear
