German Chocolate Sandwich Cookies - Gluten Free
German Chocolate Sandwich CookiesIngredients:
1 1/4 cups gluten free all purpose flour
2 Tbs unsweetened cocoa powder
1/4 tsp baking soda
1/4 tsp kosher salt
1/2 cup semisweet chocolate chips
1 stick unsalted butter or earth balance
2/3 cup packed brown sugar
1 egg, lightly beaten
2 Tbs agava syrup
1 tsp vanilla extract
Preheat you oven to 350 degrees.
In a large bowl, which gluten free flour, cocoa powder, baking soda, and salt; set aside.
In a separate bowl, place chocolate chips and butter. Microwave for 45 seconds at a time, stirring well in between, until chocolate and butter are melted and smooth. Allow to cool briefly. Add brown sugar; continue to mix while adding egg, agava syrup, and vanilla. Add chocolate mixture to the bowl of dry ingredients, and mix until combined. Scoop dough by the tablespoon. Place about 1 inch apart on nonstick baking sheet. Bake for 8 - 10 minutes, or until just set. Cookies should be a little flat.
Coconut Pecan FillingIngredients:
1 cup pecans, chopped
1 cup granulated white sugar
1 cup coconut milk
3 large egg yolks, lightly beaten
1/2 cup unsalted butter, cut into pieces, or Earth Balance
1/8 teaspoon salt
1 1/2 cups sweetened or unsweetened shredded or flaked coconut
1/2 teaspoon pure vanilla extract
