German Chocolate Sandwich Cookies

1 1/4 cups gluten free all purpose flour
2 Tbs unsweetened cocoa powder
1/4 tsp baking soda
1/4 tsp kosher salt
1/2 cup semisweet chocolate chips
1 stick unsalted butter or earth balance
2/3 cup packed brown sugar
1 egg, lightly beaten
2 Tbs agava syrup
1 tsp vanilla extract

Preheat you oven to 350 degrees.

In a large bowl, which gluten free flour, cocoa powder, baking soda, and salt; set aside.

In a separate bowl, place chocolate chips and butter. Microwave for 45 seconds at a time, stirring well in between, until chocolate and butter are melted and smooth. Allow to cool briefly. Add brown sugar; continue to mix while adding egg, agava syrup, and vanilla. Add chocolate mixture to the bowl of dry ingredients, and mix until combined. Scoop dough by the tablespoon. Place about 1 inch apart on nonstick baking sheet. Bake for 8 - 10 minutes, or until just set.  Cookies should be a little flat.

Coconut Pecan Filling

1 cup pecans, chopped
1 cup granulated white sugar
1 cup coconut milk
3 large egg yolks, lightly beaten
1/2 cup unsalted butter, cut into pieces, or Earth Balance
1/8 teaspoon salt
1 1/2 cups sweetened or unsweetened shredded or flaked coconut
1/2 teaspoon pure vanilla extract


Preheat the oven to 350 degrees. Place the pecans on a baking sheet and bake for about 8-10 minutes or until lightly browned and fragrant. Remove from oven, cool, and then chop fairly fine.
In a medium saucepan, combine the sugar, coconut milk, egg yolks, butter, and salt. Cook over medium heat, stirring constantly, and when the mixture begins to boil and thicken, remove from heat (about 5 minutes). Stir in the chopped pecans, coconut, and vanilla extract. Let cool until spreadable (about 30-60 minutes).

Assemble the sandwiches by spreading a layer of filling between two cookies.  Wrap in wax paper and seal with a GF Mom Sticker to give away individual sandwiches.
