 to your favorite board for easy reference

No Bake Cookies

1/2 cup butter or earth balance
2 cups sugar
1/2 cup coconut milk
4 Tbs cocoa powder
1/2 cup peanut butter or almond butter
3 1/2 cups oatmeal
2 tsp vanilla extract

Bring to a boil over medium heat, butter, sugar, coconut milk, and cocoa powder.

Remove from heat, stir in peanut butter, oats, and vanilla. Scoop out teaspoon size drops on parchment paper. Allow to dry for 4 hours. Store cookies in air tight container up to a week.

Note from Mom - add 1/4 cup coconut flakes to add more flavor or chopped peanuts.
