Chocolate Chip cookies are a favorite of most, including my brother.  Growing up I got use to flat chocolate chip cookies because that was how my Mom made them.  This recipe will also produce a flatter chocolate chip cookie.  Although if you love the fluffy and plump cookies just add 1/4 cup more gluten free flour.

Did you know you can freeze these cookies for later too.  Just stack them in a jar, screw on the lid and freeze.  Allow them to defrost on their own at room temperature and enjoy fresh cookies!

  • 2 1/4 cups gluten free all-purpose flour (add 1/4 cup more flour is you like a fluff cookie)
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup coconut oil, softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups chocolate chips (use enjoy brand for dairy free)
PREHEAT oven to 375° F.

COMBINE flour, baking soda and salt in small bowl. Beat coconut oil, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in morsels. Drop by rounded tablespoon onto ungreased baking sheets. 

BAKE for 9 to 11 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.
