Lemon Cream Danishes - Gluten Free
These lemon cream danishes are made with Gluten Free Mom Certified's Lemon Curd and a few easy items from your local store.
Package of gluten free pastry crust. I use this one from our local deli.
Follow the instructions.
For the one pictured above add
100 g butter, cut into cubes
1/4 tsp lemon extract
1/2 tsp baking powder
1 Tbs water

1/4 cup white chocolate
1/4 cup coconut milk
Mix up the pastry crust and refrigerate while you make the lemon curd (follow the recipe in Gluten Free Mom Certified Cookbook)
Roll out the pastry crust using a little gluten free all purpose flour or rice flour. I like to put a tea towel on the bottom and a sheet of wax paper or parchment paper on top. Cut out the pasty dough using a big mouth canning ring or a 3 inch cookie cutter. Place each circle in a cupcake pan.
Bake at 400 degrees for 8 minutes.
Once the pastry cups are pre-baked remove from oven. Top with about 1 tablespoon of soft white cheese vanilla flavored or brie. Add 1 tablespoon of lemon curd on top of the cheese. Put back in the oven at 350 degrees for 5 minutes.
Remove allow to cool for 15 minutes. Top with glaze.
For glaze melt 1/4 cup white chocolate and coconut milk together. I used the microwave for 45 seconds. Once you have drizzled the glaze on top, put the cupcake pan in the refrigerator for 30 minutes. Then you can use a knife to go around the edge of each danish to remove from the cupcake pan.
