One of the #1 foods I hear people say they can never eat again when starting a gluten and dairy free life is Mac n Cheese.  Do you miss you mac n cheese?

I have the solution for you today.  My girls have found a love for macaroni and cheese just like myself as a child.  I love to mix in some cooked meat or steamed veggies, to make a all in one meal.  Like any child once it has cheese, the dish is a winner!  Watch this video for some idea's of mix ins.

to your favorite board for easy reference

Easy Gluten Free Mac n Cheese

2 cups water
2 cups rice milk
1 box gluten free macaroni
2 cups gluten free, lactose free cheese, shredded
1 tbs dijon mustard

Bring water and milk to boil in 2 quart pan.  Add macaroni cook for 8 minutes. Then stir in shredded cheese and dijon mustard, until cheese is all melted.  Allow to sit for 5 minutes before serving.
