The Life of the Newly Diagnosed by Andrea McCarthy, CHHC, AADP

Your doctor has just told you that in order to be well, you need to eat completely gluten-free. After processing this news, you wonder what to do next. Or…what if it wasn’t you that needed to go gluten-free but your child or your spouse or a loved one that you prepare foods for on a daily basis? There is so much you need to know and you need to know it right away.

This is where I come in…

My name is Andrea McCarthy and I am a Certified Health and Food Coach, specializing in Gluten-Free Living.

I was right where you are about four and a half years ago. My doctor had just diagnosed me with Gluten Intolerance and I sat there and wondered what to do as I had no clue where to begin. What foods are safe? How was I going to dine out again, which I loved to do often? How would I prepare my meals for work? I went home that day and must have ordered 10 books on Amazon.com. I was overwhelmed, to say the least. I would have loved to have known someone who could hold my hand and walk me through this new chapter of my life. Eating is a very emotional experience and a lot of what we do revolves around eating.  We celebrate with meals, we spend precious family time at the dinner table, we go to gatherings where everyone congregates in the kitchen, not to mention holiday time.  When eating is now what is not only going to heal you but ensure you do not get sick again, it is important that you know the right way to go about it.

Not only did I have to learn a new way of eating for myself, but my son got diagnosed with Gluten Intolerance one year after I did so I had to learn what kind of foods to give him too. It was hard for him at the age of 10 and I wanted to make sure he felt comfortable with his school lunches as well as attending birthday parties. His whole world turned upside down and he relied on me to help see him through. Today, my son would agree, he eats the best of everything gluten-free and hasn’t looked back.

Imagine you can no longer eat Grandma’s homemade cannolis or your favorite deep dish pizza. But wait…..maybe you can eat something very similar…if you knew that, wouldn’t you breathe a big sigh of relief?

It is my mission as a Health and Gluten-Free Food Coach to let everyone know that being diagnosed is not the end of eating as you know it. I tell everyone that I have found gluten-free versions of all of my favorite foods and I eat fabulously. Yes, no kidding, I do.

I am passionate about helping the newly diagnosed. I can help you discern between what gluten-free foods taste good as well as the ones that are good for you. There are so many options to choose from and once you find your way, you will wonder why you ever worried in the first place. I even offer grocery store tours, where I can show you in person, my favorite gluten-free foods and provide excellent recommendations. Let me show you first hand how easy it can be.
