OOOooohhh…. I have a big secret for you.  I have been working a a particular recipe for over 6 months to make it truly correct and perfect.  I have thrown away countless batches without even a taste, I have had my family taste dozens to have them throw it out. I have went through flour like it was free. I have spent days on the same batch and waited patiently only to have it fail on the final day.  But the result is crispy, flavorful, light, airy and golden.. it has all been worth it.
