… And the Winner Is
If you have paid the least bit of attention the in the last few months, you have read or seen Tracy (AKA Nutrimom - Food Allergy Liaison) having some social media fun. The result was a Muffin bake off sponsored by The Real GF Jules. Here is the whole twitter craziness. (look for details under #Charlotte #GFAFEvent)
These winning muffins even flew all the way to Charlotte. I have to say the staff at O'Hare and US Airways were extremely nice to the muffin tops and they made it all the way down south with out even a crumb being loss.

Blueberry Buckle Muffins
1/4 cup Earth Balance
1/2 cup sugar
1 egg or replacer (1 tbs gelatin mixed with 2 tbs hot water and 2 tbs cold water, mix till frothy)
1 1/2 cups GF Jules Flour
1 tsp cream of tartar
1/2 tsp baking soda
1/2 tsp salt
1/2 cup almond milk or coconut milk
2 cups fresh blueberries
1/2 cup sugar
1/3 cup GF Jules Flour
1/2 tsp cinnamon
1/4 cup Earth Balance, cold. Diced into small cubes
Cream together the earth balance and sugar. Add in egg replacer and mix well. In another bowl mix together flour, cream of tartar, baking soda and salt. Add flour mixture alternating with milk to creamy mixture and blend. Fold in blueberries.
To mix topping: Add all topping ingredients to a small bowl and use a pastry cutter to combine into a course meal texture.
Spoon into prepared muffin tins. Sprinkle with topping. Bake at 375 degrees for 40 minutes
