Oatmeal Bars with Freedom Foods

Recipe challenge accepted!  I was given a box of Freedom Foods Oatmeal to design a recipe around.  This is super easy and so healthy. The mix-ins are all your own to be creative with.  I am thinking raisins, Enjoy Life chips and even dried fruit. 


2 cups Freedom Food's quick oats
2 tbs Hodgson Mill almond meal
4 tbs unsweetened coconut flakes (make sure you like coconut or you could use quinoa)
1/4 cup coconut oil
6 tbsp honey

1/2 cup Enjoy Life chocolate
1 tbs coconut oil

1) Mix oat meal with almonds and coconut.

2) In a small saucepan over low heat, melt honey and coconut oil. Pour into the oat mixture and mix well.

3) Grease an 8x8 pan with coconut oil or Earth Balance. Press into a 8x8 square pan and refrigerate for 1-2 hours. Cut into rectangle bars.

4) Melt topping items together in glass bowl in the microwave for 1 minute. Stir until smooth and then pour over the bars and place back in refrigerate for 1 hour.
