This break has all about baking for our family.  We have made cake, cookies, brownies, pie and more cookies.  Today I am sharing with you a recipe for sugar cookies which do not need to be refrigerated. Sometime you need to be different and sometime you just want a cookie and don't want to make for the dough to chill. Am I right? or right?  

We made snowman and our nanny turned a few into adorable penguins. 
 1 cup (two sticks) of Earth Balance, softened
 1 1/2 cups sugar
 1/3 cup favo water 
 2 tsp almond extract or vanilla extract
 2 3/4 cups gluten free all-purpose flour (I used GF Mom blend from Kid Approved)
 2 tsp baking powder
 1 tsp salt
Preheat oven to 400 degrees. Prepare baking sheet with parchment paper.

Cream together Earth Balance and sugar until light and fluffy. Mix almond extract with favo water and shake or whisk together. Add favo water mixture to mixing bowl and mix on low until well blended. In a separate bowl mix gluten free flour with baking powder and salt. Slowly add the flour mixture to the mixing bowl and stir on low to combine.

Roll the dough out on a floured surface to 1/4 inch thick and cut out with your favorite cookie cutter.

Placed cut out cookies on prepared baking sheet and bake for 6 minutes. Allow to cool 2-3 hours before icing.  Decorate the our egg free royal icing from Santa's Gluten Free Cookie Plate or found here on the blog.

** favo water is from a can of drained garbanzo beans.
