Enjoying Easter even with food allergies! #eatfreely

Are ready for your little bunnies this week?  With Easter coming we took the chance to do some Easter baking recently using Enjoy Life Foods products.  We invited Kathleen a great friend and newly deemed family member over and got busy making a mess.  

I love that even with multiple food allergies Enjoy Life Foods products work for everyone!  When I say multiple I really mean it. - Gluten free, dairy free, corn free, egg free and peanut free.  

I tried to have the decorating area's set for when the decorating squad arrived.  I love to pull out the table leaves and give everyone a space all their own. (this also helps with allergy safety)  Basically put down a huge table cloth, you can shake out later.  Set each station up with their own tea towel or parchment paper you can easily roll up and toss, when you are done.  Make clean up so much easier.

I had 8 sugar cookies for each person to decorate along with all the sugar sprinkles, Enjoy Life mini chips and little bento containers to hold the sugar for each person.  I love to make up each person an egg free royal icing in a pastry bag too.  This gives the kids practice with icing and hand-eye control.  
Some of us love to still squirt icing directly into our mouths. (right Lillie?)

We baked up the Enjoy Life brownies in a 1/4 sheet pan with parchment paper.  Once cooled we cut out Easter shapes with the larger cookie cutters.  Then topped with royal icing.

Look at these cute bunnies! 

Just let the icing dry for 3-4 hours and you can wrap them up individually to give away!  Great idea for a class room treat that is allergy safe! 

These beauties are vegan.  This is my German Chocolate cake made with Neat Egg and baked on a 1/2 sheet pan.  Kathleen from Soul Food Heals mixed up a batch of corn free paleo frosting and got to making these crowd pleasers. Imagine the flavor... german chocolate cake topped with coconut frosting, espresso chocolate drizzle and toasted coconut.  Really popular little bunnies.  

Franki stole one of these to give to our neighbor because she want to give Mr. Hart a special treat.  I found it interesting that she picked the super adorable rabbit to walk across the street.  He really enjoyed it.
