Do you ever have one of those days where you just want comfort food?  Growing up in the Mid-West my comfort food was beef and potatoes.  Today's recipe is a healthier version but still the same great taste of braised beef.  The technique is one many use, but the ingredients make this beef one of the best for a gluten free family.  Hubby even said it was amazing and kept asking what was in it as he was sure it could not be just simple ingredients.

The cool thing is you can throw everything in one pot and pretty much stick it in the oven and forget.  Your house is going to smell amazing, so be ready to resist the temptation to peek at the beef as it cooks.

Time to get cooking! 

No Peek Braised Beef

  • 2 lbs - sirloin beef tip or stew meat, cubed - I always use organic grass fed beef, trust me there is a difference
  • 1 pkg mushroom soup (Mayacamas Fine Foods gluten free dry mix) mixed with 1 cup hot water
  • 1/2 cup beef stock or 1 cup hot water and 1 Massel beef cubes (I used the 7's)
  • 1/2 cup red wine or whatever you have on hand will do
  • 1 cube Massel beef cube, crumbled
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/8 teaspoon pink salt
  • 1/8 teaspoon ground black pepper
  • 1 pint cremini mushrooms or a mushroom mix
  • 1 large shallot, chopped
  • 2 cloves garlic, smashed and chopped
  • 2 sprigs fresh thyme

Preheat your oven to 300 degrees F.
Add cubed meat to a dutch oven.
In a large bowl mix the remaining ingredients together and pour over the meat.
Add mushrooms, shallot, garlic and thyme and stir to coat. Cover and bake at 300 degrees for 3 Hours. NO PEEKING!!! Do not open the lid until done.

Serve up with some rice and veggies.  You will have fans asking for seconds.
